Chef Dan has been making sushi for many years. He learned the art from Sushi Gary from Santa Cruz, California. He then spent time working in many successful sushi restaurants in Wisconsin. He has made sushi for many famous people, such as members of the Green Bay Packers, musician Yoyoma, and musician Monty Montgomery. Chef Dan takes a contemporary view on making sushi while still offering traditional Japanese cuisine. He also incorporates many fusion dishes into his menu to make for a unique take on sushi. Dan firmly believes in fresh ingredients, using seasonal produce, local products when he can, and always the freshest highest grade fish possible.
